MINI EGGPLANT PIZZA CRISPS
If pizza is in the title...I'm eating it.
- 1 large eggplant
- Extra Virgin Olive Oil
- Your favorite marinara sauce (jarred, homemade, etc.)
- Parmesan cheese
- Panko bread crumbs
- Salt and pepper to taste
- Cooking Spray
Preheat oven to 400 degrees
Without removing the skin, slice the eggplant into approx. 1/4 inch circular disks. The thinner, the crispier it will be. Sometimes I like to keep it to 1/2 an inch if I want more of a bite
Spray a small amount of PAM or cooking spray onto a baking sheet.
Arrange the eggplant on the baking sheep and drizzle with extra virgin olive oil
Spoon a small amount of sauce over each slice of eggplant, then sprinkle with parmesan cheese.
Finally add a small amount of panko to the top. Season well with oregano, salt, and pepper.
Place in the oven and cook until the panko has browned and the eggplant is cooked through.
