Easy, Creamy Dairy-free,
Breakfast is the most important meal of the day. Far too often do we skip it! Oatmeal is one of my favorites that keeps me going til lunch time - but don't let those instant packaged oatmeals fool you. They are loaded with sugar. This oatmeal is sweetened naturally and is dairy free - it's easy, creamy, and completely customizable.
Base of the oatmeal:
1 cup old fashioned oats
1.75 cups water
1 large banana
Then: Customize it! Add fresh or dried fruit (I added in some fresh blueberries during last few minutes of cooking and more for garnish. Try cinnamon and/or nutmeg with apples, a drizzle of pure maple syrup, your favorite nut butter, a few chocolate chips, granola, nuts or chia seeds, or cocoa powder.
Directions: Mash the banana into a purée. In a small sauce pan, whisk the banana into the cold water until combined. Add oats and turn onto medium heat. Bring to simmer. Once simmering, turn heat down to low and cook until oats are done (about 8-10 minutes). Add some of your favorite additions during last minute of cooking or serve with put toppings - you'd be surprised that it doesn't taste too 'banana-y'...I will NOT eat a banana as is - it's a texture thing for me.. and I love this. It's a great way to sweeten anything up naturally.
